Obituary

Carol Jean Davison, a cherished member of the Portland, Tennessee community, passed away peacefully at her home on Saturday, April 11, 2026. Born February 23, 1952, in Dundalk, Maryland, she was the daughter of the late Emmitt Shindell and Gladys Maynard Shindell.  Carol led a life marked by dedication, compassion, and an unwavering spirit of service.

Carol's early years were distinguished by her commitment to her country, as she proudly served a decade in the United States Air Force as a computer specialist. Her military career not only reflected her technical talents but also her deep sense of duty and discipline. Following her honorable service, she channeled her drive and entrepreneurial spirit into founding and operating CJ's Catering. 

Beyond her business, Carol’s generosity and selflessness were evident in her practice of donating leftover food to the Portland Senior Center where her dear friend Jamie Rose serves as Director and the Portland Police Department, ensuring that her contributions extended well beyond the kitchen. This dedication to helping others underscored much of her life’s work and left an indelible mark on those who knew her.

Carol’s passions extended into her home life, where she found joy in gardening and preserving vegetables through canning, a reflection of her nurturing nature. Her artistic talents were equally impressive, particularly through her work with stained glass, creating beautiful pieces that showcased her creative soul.

Those fortunate enough to know Carol remember her as a deeply selfless individual, always seeking ways to give back to her community with grace and kindness. Her loving presence will be profoundly missed by her husband of 40 years, Coda Davison; her sisters Linda Hollenbaugh and Darleen Sargent; and her faithful canine companions, Tyson and Bear. She is also survived by a wide circle of extended family who carry forward her legacy of warmth and generosity.

Carol’s life was a testament to the power of service, love, and creativity. She enriched the lives of many and leaves behind a vibrant legacy grounded in community and compassion. The Portland community and all who were touched by her kindness mourn the loss of a truly exceptional person.  She will be laid to rest in Old Brush Cemetery.
